- 1 bag or two bunches of fresh spinach
- 2 tomatoes
- 1 small, white onion
- 2 garlic cloves
- 2 slices of bacon or turkey bacon, cut in chunks (1in.)
- 2 cups of fat free chicken broth
- 1 tsp. mustard
- Salt/pepper to taste
Bring 1 cup of water to a boil and lightly cook spinach, blend them with ½ cup of the same water you used to cook them, set aside.
Apart, blend together tomatoes, onion and garlic with ½ cup of broth, set aside.
In a soup pot in medium-low heat, cook the bacon until golden, pour the tomato mix and stir until it changes color. Add the mustard, the spinach, the chicken broth and salt and pepper to taste, let it boil for five more minutes and serve warm.
Sprinkle a little Parmesan cheese on each bowl for presentation.
